Intervention notes:
1. I omitted the anchovy because I did not have them.
2. I was surprised that the recipe called for adding the cashews directly to the blender, without presoaking them. To my surprise, it worked! Fortunately, I have been gifted a wonderful and powerful blender by my parents and sisters. If you have a lower powered blender, you may try soaking the cashews in hot water for 2 hours, or in lukewarm water for longer.
3. By accident, I added 1/3 c cashews instead of the 1/4 c the recipe called for. The result was a really thick, creamy dip. I added more water to the blender to thin it do a creamy, pourable dressing. However, I found that the next day, the dressing had thickened back to a puree. If this happens to you too, please let me know! It was easy to add water to thin it down.
5. But... bonus tip! I packed my greens with a "dollop" of the thickened dressing for my happy work salad on top. It did not wilt my greens, and I was able to easily stir it around and have the dressing coat the lettuce when I was ready to eat.
So... basically you just got a great recipe and free continuing education credit on therapeutic interventions for sad desk salads.
