Dairy Free Crackers- only 4 Ingredients!
If you have spent time looking up and down the cracker aisle at the grocery store, struggling to decipher labels to find dairy free options, this simple 4-ingredient recipe is for you!
I hypothesized that I could get crispy, tasty, and dairy-free crackers by making them at home.

Ingredients:
1. Almond flour
2. Egg
3. Salt
4. Pepper
Bonus: added seasoning. I added Everything but the Bagel, because there's very little that it does not make better.
Procedures and tips:
1. Mix up your ingredients. It looks like it won't combine to make a dough, and then it will. Patience, young grasshopper.
2. Next, roll out the dough. I found it simplest to roll it onto my Silpat (you can use parchment paper too). I added a plastic wrap on top because the dough is sticky.
After I got the cracker dough as thin as I could, I removed the plastic and used my bench scraper to score and cut the crackers.
3. Bake!
4. Not pictured: I followed the guidelines to remove the crackers at the edge, then popped the tray back into the oven for another 2 minutes to get the interior crackers more crispy. I probably could have left them in for another 1-2 minutes, but I was nervous to overbake them. The crackers snapped easily at the score/cut lines once removed. I allowed them to cool on a cooling rack.
5. Enjoy alone or with your favorite dips! I paired my crackers with homemade hummus and homegrown cucumbers.
Results
These simple crackers were flavorful and crispy, and rounded out my snack perfectly.
As mentioned above, the interior crackers were not as crispy as the exterior ones. I worried that the darker color would translate into a burnt flavor, but that was not the case. Still, they were all quite crispy and very delicious.
I had added about 1 Tablespoon of the Everything but the Bagel seasoning. Without the dip as contrast, the flavor was actually quite impactful. If you prefer a milder cracker, reduce the salt and pepper or the additional Everything but the Bagel seasoning.

Skip the boxed cracker aisle if you have a few minutes to make these simple crackers on your own! You can be confident in the safety of the ingredients, and you'll be done with your cleanup by the time they're out of the oven and ready to enjoy.
They keep in an airtight container for a few days (if you can wait that long!).
